I use the iTouchMIDI suite of programs -
http://www.itouchmidi.com/
- and they have a Mackie Control Universal emulator that works fine with Ableton and Logic etc. They also do the standard Keyboard and Pad and Kaos Pad emulations too, They should work straight out of the gate with the iPad but I want to see what people write for the iPads larger surface. I assure you there will be plenty of music apps. All will connect to a host machine via wireless though which is cool for me. Leave the heavy lifting (and Audio interfaces) for the host machine and give me a control surface with NO wires. You will see Lemur clones and Tenori-on clones and APC-40 clones in no time I'm sure.
