well, i guess you have to introduce also the remaining part of a typical synth voice: VCF, VCA and ADSR.
In fact, the VCO, even after note release command, still keep on producing its wave according to the pitch set by knobs. if you want to have the typical behavior of a synth, you need to take the gate out from you midi/cv module, connect to gate in in your adsr, connect adrs out to VCF/VCA (at least VCA assuming VCF is opne), set VCA gain to 0 and VCA CV knobs to a positive degree.
in this way, when you press a note, not only 1V/oct voltage is sent to VCO, but gate signal is sent to ADSR, this trigger ADSR that in turn will open the VCA making you listen to sound. as you keep the key pressed the envelope will go through ADS, as soon you stop pressing the key, the envelope enters the Release phase that will close the VCA.
at this point you won't hear any sounds until you press again a new key.
