I doubt you save money. The knobs are maybe 70 cents worth each, makes Euro 3,50 for a mixer. The time to pick the module from big basket, taking it out of the safetybag, pulling the knobs off, checking the module, stuffing it back to the bag, putting it aside for your special order. Lets say 10 Minutes per module. With the average brutto brutto price for the workers time (not the workers income, but what a producer has to take in account all in all): this makes 12 to 15 Euros. So if you are willing to pay 8,50 more...
