I have two that were built in the 80's, there are issues inherent in the DMX that made it not very useful.
The MIDI trigger works very well from boxes like the Simmons TMI, MTM and others available back then. I suspect any Alesis D series rack unit would work too, the Alesis machines had an uncanny resemblance to a DMX in programming, I'm sure the guys who designed it had one to play with, and it's not rocket science.
Use of the rack mounted existing, (i.e. cheaply replaceable) trigger to MIDI boxes made this a not very interesting project back then.
I have a pile of this kind of thing if anybody wants to take it on. Madonna is welcome to bid.
I never saw a multi channel one, but a sensitivity pot was usual, and a bantam ( tinytelephone) jack for unbalanced input from your SSL Neve Trident etc.
The CV was another thing, but did need a lot of stuff to make it work, that IMO would make an interesting project.
I initially thought the DSX would supply the CV but that was chromatic, and continuous cv involved complex pitch wheel stuff and I never made that work.
I used the Korg MS-04 pedal as a source and had variable HiHat pitch randomly, that was excellent, quite human if the hat wasn't quantized.
The variable pitch cymbal made people laugh, but toms were great , especially the El Tom and ElSnare if put in the Tom card.
I had a plan to use multiple MS-04s on multiple DMXs but once I bought all the hardware I ran out of steam, proper MIDI arrived and on we went.
DSXs went into dumpsters etc. I did put Dsub 25pins on my first DMX to make these things easier as the molex was an impossible item in the UK.
idc cable ran nicely around inside to the relevant locations, quick and neat.
We hadn't got the tascam dsub audio pin out yet, or the Yamaha AES or the Otari MFC AES etc etc, but molex
tedious.
Good luck anyway.

[oberheim] [AH] Oberheim DMX CV box project...
Hey OBerheimerz!
I'm considering building a CV box for my DMX and i am considering building a few.
Is there any demand out there for such a box>
any ideas or specifics people may be looking for besides just 8 CV ( pitch controls )
http://www.flickr.com/photos/ecallender/178653358/
( not mine, madonna's!!! )
i was considering connecting the trigger ins as well...
maybe a box that has
8 cv controls and
1/4" ins for the triggers
or a box for cvs and a separate cable that people can buy for trigger ins
i have sourced the weird molex's and figured out a circuit...
i just want to see how many i should make and what people might be willing to pay for such a breakout box.
Thanks!
