I'm not sure about your 707, but mine with the pitch mods don't sound 'glitchy'.
(Maybe you did not remove the original clock signal of the sounds
This would sure make it glitchy & detunable.)
Sure, when you drop the sample rate, the sounds get more lo-fi, but this is to be expected when you drop the sample rate of anything.
An anti-aliasing filter would only dull the sound when you lower the pitch, I'm guessing this is what you want
If so, It might take a fair bit of re-working.. you could use dual-gang pots, with the other gang controlling the filter cutoff.. still not an easy task.
From memory the 707's sounds only run through one very simple filter.. but I could be wrong.
If so, you would need to build 8-10 new filter circuits that have a semi decent response.
