Now seriously, multitrack is the way to go, most of the artist in the
early synth days used multitracking for polyphonic patches when only
mono synths was available, now with MIDI and digital recording is very
easy...
If you have a midi-cv converter then you can program your polyphony
using separate monophonic MIDI tracks and then recording each track.
Also I remember tere is a midi plugin for span a midi chord over
several mono midi channels.
